Using fed-batch fermentation in very high gravity brewing: effects of Tween 80 and ergosterol supplementation on fermentation performance of immobilized yeast in calcium alginate gel

چکیده
: In very high gravity brewing, fed-batch fermentation was carried out with Saccharomyces cerevisiae immobilized in calcium alginate gel. The specific gravity of initial wort and feeding medium originated from 55% malt and 45% maltose syrup adjunct was adjusted to 28oBrix and 41oBx, respectively. The effect of supplementation of mixture of Tween 80 and ergosterol to the initial wort or to the feeding medium was examined. The results indicated that addition of 0.3% (v/v) Tween 80 and 24ppm ergosterol to the initial wort improved the fermentation performance of the immobilized yeast. Under these conditions, the primary fermentation time reduced 24h and the ethanol concentration was similar in comparison with those of the fedbatch culture without the supplementation.

Effect of Tween 80 and ergosterol supplementation on fermentation performance of the immobilized yeast in high gravity brewing
This paper deals with the effect of Tween 80 and ergosterol supplementation to the 24oPt wort with 30% maltose syrup adjunct on the fermentation performance of the immobilized yeast in calcium alginate gel. The higher the content of supplements in the wort, the higher the yeast growth, the sugar and free amino nitrogen consumption rates and the ethanol production rate but the lower the ethanol ...
متن کاملUsing fed-batch fermentation in high-gravity brewing: effects of nutritional supplementation on yeast fermentation performance
To intensify the brewing process and increase the fermenter productivity, many breweries throughout the world have been embracing high-gravity brewing. However, increasing original wort concentration can cause a negative effect on yeast fermentation performance. This study focused on the application of fed-batch fermentation in high-gravity brewing. High gravity worts of 24oBx (using 30% high m...

متن کاملUsing high pitching rate for improvement of yeast fermentation performance in high gravity brewing
One of the promising methods to improve yeast fermentation performance in high gravity brewing is to increase pitching rate in the bioreactor. In this study, fermentation with four different pitching rates (1.5×107, 4.5×107, 7.5×107, and 10.5×107 viable cells/ml wort) was carried out to investigate the impact of pitching rate on yeast fermentation performance and beer quality from 24oBx wort. T...

In this study, lactic acid production by repeated batch fermentation using cell entrapped methods was compared. Barium alginate beads, agar gel and polyurethane foam cubes were employed as carriers to immobilize Lactobacillus casei subsp. casei for the purpose of L (+)-lactic acid production. Increasing concentrations of lactic acid during fermentation were better tolerated by barium alginate e...
